You can choose your own meat you want at the beefbar. Dry-ageing is an age-old process for naturally tenderising prime cuts of beef in a special humidity and controlled environment. Dry aging enchances the flavour of beef in two ways. Firstly, by removing musture, the flavour & taste is enchanced. Secondly, the beef’s natural enzymes breakdown the muscle fibre with produces a more tender beef.
